Kryos, refrigeration of sauces and gravies with liquid N2

Kryos is the technology developed by SIAD for refrigeration in a protective, oxygen-free atmosphere. It proves to be of particular interest in the food industry, as well as in enology, to optimize the manufacturing processes of certain products.

Kryos is ideal for cooling foods such as sauces, gravies, creams, purees in general all those liquid or semi-liquid products, even those containing semisolid parts such as chopped vegetables or the like.

SIAD’s system operates in a continuous mode with complete automation. Dedicated software adjusts the amount of liquid N2 to be introduced to lower the temperature to the required value. The operator only needs to set the values and press the start button.

Throughout the process, control is continuous: a touch screen allows constant viewing of operation and intervention if necessary.

Benefits

The use of liquid N2 with Kryos technology, compared with other cooling methodologies, proves to be particularly advantageous,

  1. Virtually instantaneous refrigeration
  2. The high cooling power
  3. Perfect for batch processing

A widespread innovation in the wine industry, where the refrigerant fluid used is liquid CO2, because of its undisputed advantages on grape processing and final wine quality, Kryos, due to its construction, geometric and dimensional characteristics, ensures easy cleaning and sanitization.
